The story of stilton goes back to the 18th Century where it was tasted accompanied by a liqueur flavored with mace (condiment made from nutmeg with the scent of cinnamon and pepper) to bring out its aromas. On special occasions, it was dug every day in the middle and a spoon of Port was poured during a week. It was then tasted with a glass of Port, between men, in lounges or smoking rooms. The Stilton takes its name from the eponymous city located about 130 kilometers north of London, although it is not manufactured! The city served as a stagecoach stage for the London-York route. The most well-known hostel offered travelers a creamy, creamy blue cheese, which took the name of the city over the years.
It is today one of the few English cheeses to benefit from a Protected Designation of Origin. Our Stilton Refiner is manufactured by Colston Basset, located in Nottinghamshire County, England. Since 1913, this family dairy has been making Stilton according to tradition from the milk of four local farms. It is one of the last cheese dairies to manually mold cheese. Once placed in the ripening cellars, it will be necessary to wait between four and six weeks before it is pierced with small holes that will allow the air to enter and thus form the blue veins characteristic of the Stilton. Creamy and rich in taste, it is considered one of the best Stilton in the country.
